Angel Esférico

Participant Summer Drink '08
 
Ingredients:
Spheres*
500 ml Fresh orange juice
400 gr Cocoa butter
80 gr White chocolate
50 gr Sugar

Cocktail*
500 ml Fresh orange juice
200 ml Cava
100 ml Sugar Syrup 50%
100 ml Vodka Mandarine
50 ml Angel d’Or
Oregano leafs

* Ingredients for 40 persons
 

Preparation:
Disolve the sugar and the orange juice and pour into half-spheric moulds, with a 3 cm diameter. Freeze. Once frozen, join two half-spheres in order to form whole spheres and then freeze again. Mix the white chocolate with the cocoa butter and melt. Afterwards, with the aid of a pin, bath the spheres in the melted chocolate butter. Keep in the fridge until defrozen.
In a small liquor glass, place the orange sphere, fill with the cocktail mix and place a leaf of oregano on top.
